Caramel Red Apple and Honey Finish

BACKGROUND

The Timuza Coffee Cooperative consists of more than 200 smallholder farmers from the Kamano tribal group, located southwest of Kainantu in the villages around Namura town. The region features soils made up of a mixture of black and brownish-red loam, where traditional Typica coffee is primarily grown under the shade of casuarina and albizia trees. Each family typically manages an average farm size of 1.4 hectares, supplemented by nearby gardens for growing food crops such as sweet potatoes, taro, and cassava. Farmers have benefited from training and support in areas like financial management, gender equality, coffee cultivation, and processing standards through local partners. The coffee harvest occurs from April to September, during which ripe cherries are selectively picked, manually pulped, fermented in traditional bilum bags, washed, and fully sun-dried. In 2016, Timuza achieved first place in the National Cupping Competition.
