Week 16: Peru From the beautiful region Cajamarca in Peru, Kovachii coffee is designed to capture the quintessential flavor of Northern Peru. With most single origin coffees the flavor will vary from season to season, but with Kovachii it is always sweet and delicious. Most of the coffee produced in Peru is processed by hand on the producer's farm. The organic cherries are selectively harvested, de-pulped, processed and dried on patios, drying beds and tarps.
